Precis of The art of dining well
“The art of dining well is no slight art,” wrote Montaigne, “the pleasure not a slight pleasure”. Like symphony or opera, dining can draw us out of ourselves. And, as with painting or poetry, dining can lead us to a more contemplative state.
This aesthetic greatly enhances our appreciation. And that very appreciation is further enriched by possessing two distinct dimensions. The first is our gratitude – to chef and associated players – for the boon we’ve received. The second – our discernment and judgment of quality, substance… even beauty. It almost seems a shame that the dining room does not ring out with applause for an artfully prepared dish…
